After a week or two in soft-open mode, chef Sandy Dee Hall’s restaurant, Raw Material, is open for business at 131 Orchard St. (between Delancey and Rivington streets).

Black Tree, his farm-to-table sandwich shop, closed over the summer for a revamp. Raw Material is a simplified version of the original concept. He’s still sourcing ingredients from local greenmarkets and other regional suppliers. But unlike Black Tree, the whole menu isn’t constantly reinvented.

There are raw oysters, ceviche, burrata served with salmon roe, a poke bowl, steak tartar and a burger with oyster mushrooms. Hall is also offering nightly specials. Last night, he was cooking up jambalaya. There’s still a full bar, including specialty cocktails.

There’s another new twist. Having teamed up with Elise McMahon, one of the organizers of the Hester Street Fair, Raw Material now includes a small retail store. In a message to friends and family, she explained that the retail section would feature “resourcefully made goods,” small press books, jewelry, bags and body products.

During the day, there’s a pop-up breakfast burrito joint operating out of the space. It’s called The Jetty. See their Instagram account here.

Raw Material is open Wednesday-Sunday starting at 5 p.m. The Jetty serves Thursdays and Fridays 8 a.m.-3 p.m. and weekends 10 a.m.-4 p.m.
