
Chinatown seems to be going crazy for 10Below, the new hand-rolled ice cream shop on Mott Street. As Florence Fabricant reported in the Times earlier this week, brothers Wilson and Richard Tam and partner David Chen have brought Thai-inspired ice cream to New York:
Cream or custard is poured into a chilled metal container and worked with trowels until it freezes to a creamy consistency. The Tams say that the rapid freezing, which makes for the tiniest ice crystals, guarantees creaminess. Fruit and other ingredients can be chopped and folded in. It’s then scooped, in rolls, into a cup with optional toppings.
