My partners Annika Sundvik and John Lavelle have been with me in the restaurant business on the Lower East Side for over 15 years, so Essex was a natural for us.
Annika inspired the Scandinavian food but we also like to have fun with the ingredients, many of which are sourced from the market.
At the market, I get to see the customers, their reactions and the feedback can be inspiring.
