Paulaner Brauhaus Releases More Info Regarding Bowery Restaurant

Earlier this week, the team behind Paulaner Brauhaus at 265-267 Bowery, met with a group of neighbors who have expressed concerns about the new restaurant.  At the time, some residents said they wanted more information about the project.  Morali Architects, which is overseeing construction, has complied, posting quite a few details and numerous technical drawings, on its Facebook page.

Many of the questions Tuesday night came from residents living on the second floor above the restaurant about soundproofing. The plans offer specifics about the materials to be used and go into detail about the removal of the windows and doors on the front of the building.  The new doors will be constructed in such away that large brewing equipment can be brought in an out of the restaurant (Paulaner beer will be brewed on site).

The Facebook posts note that they’ve collected about 400 signatures in support of the new business.  The paulaner team will return to Community Board 3’s liquor licensing panel Monday night. Last month, board members asked owner Rudy Tauscher to do more outreach in the community.

  1. I was at the this introduction for the Paulano plan and live next door. Its a big idea with some intriguing potential but a lot of moving parts like a working brewery in a residential building, 250 person capacity in a bar-packed and noisy area.

    They gave some details about the noise control, but not a lot about other things so far like how they would vent the brewery, kitchen or handle safety and crowd control.

    Its a lot for people to absorb in a few days, especially since we’re not experts in noise/traffic/brewing beer.  Since the project is huge, the impact will be big now matter what. I think there is good room to work with them if they can have a solid dialogue about how to mitigate some big issues and proceed in a diligent manner.

    So far though, they have not put a lot in writing as binding Stipulation for their liquor license. Doing that with the community could lead to a lasting success.  If they don’t its too many big risks for such big project in an super stretched block.
